About the role

The Butcher will work across multiple food outlets within Ocean Hotels Barbados, ensuring that all meat and fish products are prepared to the highest AAA Five‑Diamond and LQA standards. This role requires meticulous attention to detail, strong self‑motivation and the flexibility to respond to service demands at any time.

Key responsibilities

• Maintain a clean, organised kitchen and adhere to all safety and accident‑prevention standards.
• Receive, check and store food items, ensuring proper labeling and temperature control.
• Prepare meats and fish using a variety of techniques such as boning, tying, cutting and trimming.
• Log daily temperatures of freezers, refrigerators and buffet foods.
• Conduct inventory counts, control stock levels and complete daily production lists for each outlet.
• Ensure all food is served at the correct temperature and meets quality and consistency standards.
• Assist with in‑room dining orders, delivering within 30 minutes as required.
• Participate in training programs and performance appraisals to maintain departmental SOPs.

Required profile

• Secondary education required; culinary school certificate or degree is an asset.
• Level 2 or higher Caribbean Vocational Qualification in Butchery, or at least 2 years experience in a AAA Four/Five‑Diamond hotel/restaurant, or 5 years in a reputable butcher shop.
• Supervisory experience and ability to work under pressure.
• Physical ability to stand 8 hours, lift 50 lb, and tolerate kitchen heat and cold.

Required skills

• Proficient in butchery techniques (boning, tying, cutting, trimming).
• Familiarity with kitchen equipment and machinery operation.
• Ability to log and monitor food temperatures accurately.
• Experience with inventory management and recipe conversion calculations.
