Chief Steward

About the role

The Chief Steward leads the stewarding department at Ocean Hotels Barbados, ensuring the highest standards of cleanliness, hygiene and operational efficiency across all food‑processing and back‑of‑house areas.

Key responsibilities

• Develop and enforce SOPs for cleaning, sanitising kitchen tools, equipment, floors and walls.
• Supervise all stewarding staff, manage costs, and ensure compliance with AAA 5‑Diamond, LQA Benchmark and local health regulations.
• Coordinate maintenance of dish‑wash machines with ECOLAB and the maintenance team.
• Oversee garbage segregation, grease‑trap upkeep and proper disposal of waste and chemicals.
• Assist with banquet set‑ups, buffet stock, and liaise with the Executive Chef on kitchen maintenance.
• Conduct monthly inventories of crockery, silverware and service equipment, and manage re‑ordering.
• Lead loss‑prevention initiatives for glassware, china and flatware.
• Prepare monthly shortage reports, support budget preparation and cost control.
• Manage recruitment, performance appraisals, coaching and disciplinary processes for the department.
• Plan and deliver training, on‑the‑job coaching and development programmes in line with AAA 5‑Diamond and LQA standards.

Required profile

• Minimum 5 years of experience in a senior stewarding or kitchen operations role.
• Current HACCP certification.
• Physically fit, able to lift up to 25 kg.

Required skills

• Computer literacy – MS Office, inventory management systems and hotel PMS.
• In‑depth knowledge of HACCP principles and daily audit procedures.
